RECIPE OF THE MONTH - Chicken with Jambalaya

Chicken with Jambalaya

  • 2kg chicken
  • 4 x tblsp oil
  • 2 x chorizo sausages
  • 3 x red onions
  • 1 x red capsicum
  • 2 teasp crushed garlic
  • 1 teasp chilli powder
  • 1 teasp oregano
  • 1/4teasp cayenne pepper
  • 6 tblsp tomato paste
  • 3 cups rice
  • 1 large tin diced tomatoes
  • 2 litres chicken stock

Cut chorizo sausages in half.

Heat oil in pan and cook the sausages.

Remove from pan, slice into small pieces and set aside

Cook the chicken in same pan, when chicken is par cooked remove slice and place onto a baking tray, cover and set aside to be cooked later in oven

Cook onions, capsicum and garlic in the same pan until soft, add chilli, cook, stirring for 1 minute.

Add spices and tomato paste, cook, stirring for 2 minutes

Add rice, stir to coat mixture

Add tomatoes and stock to pan and bring to simmer

Return sausage to the pan

Cook uncovered about 45 minutes or until rice is cooked, stirring to keep from sticking on bottom and liquid has been absorbed.

 

Feeds 40 children

Divide by 4 for a family

National Quality Standard

The National Quality Standard (NQS) sets a high benchmark for early childhood education and care services within Australia. The NQS includes seven quality areas that are important to outcomes for children. These are Educational Program and Practice, Children’s Health and Safety, Physical Environment, Staffing arrangements, Relationships with Children, and Collaborative Partnerships with Families and Communities. Services are assessed and rated by their regulatory authority against the NQS, and given a rating for each of the seven quality areas and an overall rating based on these results.

WWPCCC is currently rated as Meeting (April 2021) the National Quality Standard (NQS).
Quality Area 2 Children’s Health and Safety and Quality Area 5 Relationships with children were both rated as Exceeding the National Quality Standard. Our rating is displayed in the foyer.
